Our Journey

From the Fields of Tamil Nadu

Why We Do It

At Palm & Pestle, we aren't just selling sugar; we are preserving a legacy. In a world of refined, processed ingredients, we stand firm in our commitment to traditional, nutrient-rich foods that have sustained our ancestors for generations.

By choosing us, you support a network of small-scale farmers who still practice the art of making country sugar in iron vats over wood fires—a method that retains the soul of the sugarcane.

From Field to Kitchen

Harvesting Sugarcane
01

The Harvest

It starts at dawn. Our farmers hand-select only the mature sugarcane stalks grown in organic soil without chemical fertilizers. The cane is harvested manually, ensuring only the highest quality juice extraction.

Traditional Processing
02

Traditional Reduction

The juice is extracted and slowly simmered in large iron vats over an open flame. Impurities are removed naturally using okra stems—an ancient technique—leaving behind pure, golden liquid gold rich in minerals.

Cooling and Crushing
03

Natural Cooling

Once reduced to the perfect consistency, the syrup is poured into wooden molds or cooled on stone slabs. It crystallizes naturally into the granular country sugar you know and love.

Heritage ingredients in a traditional kitchen
